I found this great idea that someone posted on Instagram that you roast sweet potato slices and use them as buns!
I cut the sweet potatoes up, threw on some avocado oil, and baked them for a bit. I thought they would pair so well with Trader Joe’s Chili Lime Chicken Burgers and some Brussels sprouts.
What I didn’t think about was that the burger is kind of big, and a sweet potato is not that wide.
I ended up cutting the burger and placing on the pieces of sweet potato and made it work. I guess that original picture of the sweet potato bun with pulled chicken was a better idea since the size and shape isn’t set by the meat but we I've and we learn!
While making a sweet potato bun didn’t fully work it was still dang delicious!
