I love a good Taco Tuesday.. or Wednesday... or Saturday.
This one has a bit more to it, but it isn't all totally necessary, and if you love tacos often, it's good stuff just to have around.
These are black bean based tacos, but you can always use any meat in place of the black beans or along with them!
Don't be afraid to get creative with any recipe. I don't want you to feel too locked into exactly what the recipe says, but it is there to follow if you aren't too confident or if exactly what the recipe says sounds best!
Ingredients for 1:
½ - 1 cup black beans, drained
½ - 1 cup riced cauliflower
½ - 1 cup of cabbage mix (I buy the premixed bag at the store) – I mix some Primal Kitchen Cilantro Lime dressing in with it
2 Siete tortillas (this is the brand I prefer- need to be cooked during process)
Seasoning- I like good old taco seasoning or chili powder
Optional toppings and sides: hot sauce, jalapenos, onions, salsa, guacamole, rice, chips
1. Warm skillet over medium heat
2. Add riced cauliflower, cook about halfway
3. Add in the beans and season, cook until heated through
While that's cooking...
4. On separate skillet you’ll have to heat the Siete brand tortillas over medium high heat. *Pro Tip: when the tortillas are done, fold them in half on the plate
5. Once everything is heated – make tacos!
I like to add in black bean & rice, then some cabbage mix, cilantro, little Siete habanero sauce, and lime with avocado on top or on the side.
If I have extras, I just add it to the side of my plate and eat it out of the shell.
You could also do this mix on top of a lettuce or greens and made it like a taco salad! I also like ground turkey if I'm adding meat to the meal or to make for my husband. I always have extras, leftovers, or all the ingredients on hand all the time because I have some kind of taco (black bean, ground turkey, fish, or salad) at least once a week!
